Banana bread w/ cricket flour 
With bananas, dried peaches, mulberries and cricket flour

Serves  2     Hours 1 h      Difficulty easy​

Ingredients
  • 3 ripe banana’s
  • 3 eggs
  • 8 dried apricots
  • handfull of mulberries
  • 200 gr flour
  • 30 gr cricket flour
  • 1 teaspoon vanilla flour
  • 1 teaspoon baking soda
  • rasp and juice of 1/2 lime
  • little bit of salt
Method​
  1. Preheat the oven to 170ºC.
  2. Mix with a kitchen machine or by hand the bananas and eggs into a soft mixture.
  3. Then add the flours, vanilla, baking soda, rasp and juice of 1/2 lime and some salt. Mix into a fine and smooth batter (beslag).
  4. Cut the dried apricots into little pieces.
  5. Add them to the batter together with the mulberries.
  6. Add the whole mixture to a baking tray lined with baking paper.  
  7. Bake the banana bread in 30-35 minutes light golden brown. Leave it to cool down before you cut it into pieces. Enjoy!
