COUSCOUS SALAD 
Spicy couscous salad with termites

Serves  4     Hours 30 min      Difficulty easy​

Ingredients
  • 100 gr Termites 
  • 125 gr couscous (65 gr pp)
  • 1 cucumber
  • 1 yellow paprika
  • 20 cherry tomatoes
  • 20 black olives
  • 2 spring onions
  • 4 tablespoons raisins
  • 2 spoons parsley  
  • 2 spoons cilantro
Dressing:
  • 3 teaspoons of ras el hanout
  • 2 cloves of garlic
  • 5 tablespoons olive oil
  • 1 lemon (½ for juice / ½ as garnish) 
Method
  1. For the dressing: Cut each garlic into four pieces.
  2. Add into a small bowl the garlic, ras el hanout, olive oil and press the juice of ½ lemon.
  3. Add the termites and let them soak for a while.
  4. Put 125 gr of water into a pan and bring to boil.
  5. After the water boils, remove from stove and add 125 gr couscous. Wait until all the water is absorbed by the couscous. 
  6. Cut the cucumber, paprika, parsley, coriander and unions into small pieces.
  7. Cut the tomatos and olives in two.
  8. Put all the vegetables into a bowl and add the couscous and mix
  9. Remove the garlic from the dressing-mix and add the dressing to the bowl.
  10. Mix everything together and serve. Enjoy!
