GREEN BEANS SALAD 
Summer green salad with silkworm pupae

Serves  4     Hours 45 min      Difficulty easy​

Ingredients
  • one hand of silkworm pupae
  • 100 gr. lettuce baby romaine 
  • 100 gr. lettuce rucola
  • 125 gr. green beans
  • 10 broad beans pods
  • 2 small onions
  • 1 small red pepper
  • 1 small piece of ginger
  • 2 cloves of garlic
  • few branches of coriander
  • 1/2 lemon
  • white vinegar
  • olive oil
  • salt & pepper
  • pita bread for 4
Method
  1. Remove the broad beans from their pods. Cut the beans in two and remove the outside layer (see video). 
  2. Trim the ends of the green beans and cut them in two.
  3. Add the green beans and broad beans to a pot with water and boil for 3 min. 
  4. Cut the ginger, onions, garlic and red pepper into small pieces.
  5. Put a pan on the stove and add the garlic, ginger, onions, olive oil, vinegar and silkworm puppaes, chili, salt and pepper. Fry everything at low fire.
  6. Stir the mix and remove from pan once onions are brown.
  7. Wash the lettuce and break it into smaller pieces into a big bowl.
  8. Add the cooked beans and the silkworm pupae mix, and press 1/2 lemon over the mix.
  9. Mix everything and scatter coriander on top. Serve with pita bread. ​Enjoy !
